A mountain of veg

is what I ate for dinner tonight!



I was getting ready to make my food and I realised the veggies I had in my fridge were well past their best.  A quick dash to Sainsbury solved that and I came back with:

  • broccoli
  • red onions
  • courgettes
  • mushrooms
  • peppers
  • sweet potatoes
  • carrots

and I was able to make a huge pan of roasted courgettes, red onions, peppers and carrots to go with my steamed turkey breast.

Food has been really good today and I haven’t deferred from my plan once!  Only now the day is almost at an end, have I realised how much I have missed my old way of eating and I am going to try super hard to keep away from the junk.

I wasn’t able to get to the gym after work today as I had to work late – booooooo!  As I only had an hour before mini JAG got home from school and he hadn’t got his keys, I had to go straight home.  I’m taking my bag to work with me tomorrow though so I can go straight from work.  I did attempt some skipping in the garden but the rain was just too heavy and sadly, there is nowhere with enough room in the house.  Still, I tried!

Food for today:

B: Porridge made with skimmed milk, scoop whey & topped with 100g blueberries & 20g pecans
S: 150g Greek yoghurt mixed with 1/2 scoop whey
L: 1/2 can tuna in wholemeal flatbread
S: 110g lean ham
D: 190g turkey breast, steamed with roast carrots, courgettes, red onions & peppers
S: Protein fudgesicle (See pic below)



Drinks: 2.2L water, 5 mugs green tea (My new mug at work holds a pint of liquid so that is 3 pints of green tea whilst at work!)

Calories: 1697
Protein: 176g (43.2%)
Carbs: 125g (28.6%)
Fat: 51g (28.2%)
F&V: 6.9

Exercise: A failed attempt at skipping!

Here is the recipe for my protein fudgesicles.  It’s based on my peanut butter cups and in all honesty, by the time I was halfway down it, it had got a bit sickly so I might try and tweak the recipe next time, maybe adding in some Greek yoghurt to make it a bit creamier.

Makes 5:

4 scoops whey protein – I used cookies & cream True Whey
70g almond butter
4 tsp 100%, unsweetened cocoa powder
Capella drops – Chocolate Caramel (optional)
Water to mix

Add all ingredients to a bowl and mix well.  Slowly add in water until the mixture resembles a cake batter consistency.  Pour into ice lolly moulds and freeze until ready to eat.
