Wholegrain Spelt Pancakes



Makes 4 pancakes

Ingredients:

  • 100g spelt flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1.5 tbsp protein powder
  • Pinch sea salt
  • 175ml milk of your choice (almond or coconut works well)

Toppings:

Choose your own toppings, but I like…

  • Greek yoghurt
  • Maple Syrup
  • Fresh berries
  • Chopped nuts
  • Nut butter
  • Cacao nibs

Mix the dry ingredients in a bowl and then stir in the milk. Whisk until blended.  Heat a heavy bottomed frying pan or skillet with a spray of oil until hot.  Drip the mixture into the pan and watch until you see bubbles appear on the top.  Carefully flip over and cook the underside.  Stack and add your toppings and enjoy.

They are particularly nice with berries added to the batter – I added blueberries to a batch and they went all juicy and burst whilst cooking – divine!
