Buffalo Casserole

Serves 4
- 420g diced buffalo
- 150g sweet potato, peeled and diced
- 2 large carrots, peeled & sliced
- 1 courgette, sliced
- 1 red onion, roughly chopped
- 250g mushrooms, chopped
- 3 cloves of garlic, finely chopped
- 3/4 pint beef stock
- 1 tsp mustard
- 100ml red wine
- Good shake of mixed herbs
- Handful of parsley
Add all ingredients to the slow cooker and cook on a medium heat for 4-5 hours.
