Jambalaya

Serves 2

  • 250g jumbo king prawns
  • 1 red onion
  • 1 green pepper
  • 1 red pepper
  • 100g brown basmati rice
  • 1 garlic clove
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp cayenne pepper
  • 15ml tomato puree
  • 400g chopped tomatoes
  • 1 stock cube (I used vegetable)
  • Water

Boil the rice separately in a pan whilst preparing the vegetables.

Fry the onions and peppers in a little oil/butter until softened.

Then add garlic, herbs & spice, salt & pepper to taste and saute for a few minutes.

Add the tomato puree, tomatoes, stock, prawns and cook gently.

Add the rice and mix well.  Serve immediately.
