Moroccan Couscous Salad

Ingredients:

  • 200g couscous
  • 30g butter
  • 1 small red onion, finely chopped
  • 2 cloves garlic, crushed
  • 1/2 tsp cinnamon
  • 1/4 tsp cumin
  • 1/4 tsp ground ginger
  • 1/2 pint vegetable stock

Add the butter to a pan and melt.  Add in the onion & garlic and spices and sautee for 3-4 minutes until soft.  Add in the cous cous and stir so that it is coated with the butter and the spices.  Add in the vegetable stock, bring to a simmer and then turn off the heat and cover for 5 minutes.  Fluff up with a fork and serve.

Easy peasy!

It’s a lovely fragranced dish and even the husband gave it two thumbs up – quick, simple and delicious, what more could you want?

Lovely served with marinated lamb or chicken.
